This creamy smashed salmon on toast is the perfect high protein, no-cook lunch for hot summer days.

Method

  1. Toast the sourdough slices until golden brown.

  2. Add the salmon, cream cheese, dill, mustard and lemon juice to a bowl. Season with salt and pepper. Roughly smash and mix to combine all of the ingredients together.

  3. Scoop two large tablespoons of the salmon mixture and spread on top of one of the sourdough slices. Repeat with the other slice and remaining mixture.

  4. Place the cucumber ribbons on top and sprinkle with the black sesame seeds, if using. Serve immediately.
