This creamy smashed salmon on toast is the perfect high protein, no-cook lunch for hot summer days.
Each serving provides 406 kcal, 33.7g protein, 28.9g carbohydrate (of which 6g sugars), 16.8g fat (of which 4.8g saturates), 2.1g fibre and 1.92g salt.
Ingredients
- 2 sourdough bread slices
- 160g/5¾oz ready-to-eat cooked salmon, skin removed
- 100g/3½oz light cream cheese
- 20g/¾oz fresh dill fronds, finely chopped
- 1 tsp Dijon mustard
- ½ lemon, juice only
- 1 baby cucumber, peeled into ribbons
- salt and freshly ground black pepper
- black sesame seeds, to garnish (optional)
Method
Toast the sourdough slices until golden brown.
Add the salmon, cream cheese, dill, mustard and lemon juice to a bowl. Season with salt and pepper. Roughly smash and mix to combine all of the ingredients together.
Scoop two large tablespoons of the salmon mixture and spread on top of one of the sourdough slices. Repeat with the other slice and remaining mixture.
Place the cucumber ribbons on top and sprinkle with the black sesame seeds, if using. Serve immediately.
