The Mexican Taco and our gastronomical culture

After the last article about the drugs war in Mexico I want to give you another perspective of Mexican people and I hope I could take away that violent image that I probably give you about our society. Some place are insecure as in many countries are too, I think. Although, there is a violence climate, the spirit of Mexico is not at all.

The independient Mexico has a mixure of cultures, indigenous culture and Spanish culture and this mixure is clearly reflected on his gastronomy. But this influence is not only in the components of the dishes but in their names. For example you can enjoy a Moros and Cristianos (Moors and Christians) that is not more than a mix of rice and beans with banana or Platano like we call this fruit.

The combination of influences has its maximum represent on a particular and popular dish around the world: the Mexican Taco. Its original recipe is a tortilla - a kind of plate made of corn's tough invented by Aztec civilization- fill with beans (frijoles) and red tomato onion and Red hot pepper (Chile). But the creativity for make a taco depends of the zone you live. In the north of Mexico people has a special taco called Burrito. Burrito is a mix of wheat tortilla, rice, beans, cheese and meat. Burrito is a dish very popular in the States and I am sure you have tasted it. If you didn't you have to do it, I recommend you.

In the pacific coast in places like Michoacan the carnitas taco is the classical option. The carnitas taco is made of Pork meat (cooked in an special way), corn tortilla (tortilla de maíz) and sauce (a blend of green chilli, onion, garlic, salt, tomato) and a avocado sauce called guacamole.

If you were travelling for the centre of Mexico you of course have to try the suadero taco or machito's taco. Suadero is a special cut of cow meat and machito is a cow or lamb's intestine moorage and it has the shape a penis, its the source of its name (Macho, machito). You have to eat the pastor taco too, if you visited Mexico. Pastor taco is leg's pork with pineapple, onion all cooked on a device call trompo (spin). You can see a cooker or taquero as we call people that make tacos.

If taco is a culture by itself is either the places where you can eat them. Taqueria is a place where a person called taquero makes tacos. All along the country you can find taquerias in almost every corner inclusive in small towns. Of course you could eat tacos on restaurants but if you want to live the true experience of eat tacos you have to do it in the little stands put on the streets.

Well I forgot add some pictures took at McCartney's concert here you are two.

Finally I want to thank for the facilities to the taqueria "LA GÜERA" where you can enjoy a really tasty pastor and suadero tacos.

Ok. It was a very work hard month I would have liked writing a little bit more but I couldn't, so my apologies for that. I hope still sharing knowledge and experience learning English and carry on making friend around the world. I want to give the thanks to the BBC team that make possible this blog, to Carrie and Rosie for the chance to learn a lot for their help and patience.

The Narco War. Some myths and realities.

Hi everyone!

I want to thank you for all your comments. Thank you for reading me. Well, the issues of this article are going to be: one what is happening in México with all of those news about narco guerrilla? and two a reflexion about whether drugs should be legalized or not.

In the beginning of the government of presidente Calderon starts a low intensity war versus the most important dealers of drugs. These dealers had built a big network of complicity and corruption, so they could make their criminal activities with authorization of locals and municipality government. The big mistake of the narco war initiative was not existed the infrastructure, police corps and logistic to win the war in overwhelming.

Although in many places of the Mexican republic there is a violence climate, in Mexico City do not. It's true in place like Guadalajara or Monterrey you could find dismember bodies or hanged people in the bridges or lampposts, inclusive this kind of executions in public in labour hours. Some touristic ports or beaches just like Acapulco or Cancun have seen perverted their easy daily life due to fronts between cartels and police.

Before the war started, the illegal migration of Mexican and Centro American people was of plenty of people crossing the Bravo River but today the panorama is so different. Many of the narco pits or narco fosses have been found contained bodies of Centro American and Chinese people. In more than one way the narco war has brought some benefices for the States. Many people here think Mexico has put the dead and the Americans the weapons.

So recently information about monkey business within FBI like the Fast and Furious operation and many other hidden operations has made think of Mexican population in the drugs legalization, after all North American society has been so relaxed with clinics or hostel where you can buy marihuana with any problem. In the other hand Narco is an economical activity that raises billions of dollars and employs near of 600,000 workers all along the levels.

It is so sad to me see how devastated are places as Michoacan or Morelos, touristic centres in other time. But is not to bad at all the most of Mexican people works hard for carry on and get ahead their families. I recommend you if you decided travel to México visit public places like museums or market places they are secure. Mexico City has a lot of places to see and is the most secure city in Mexican Republic.

I invite you to give me your impressions of Mexico from what you see or hear in your News Shows or what you read in your newspapers.

PD. In the next articles I'm gonna give you some recommendations of what places to visit and a review of the Chapultepec's Castle and the Archeological Museum and of course, I am preparing an article about typical dish: The original and Mexican "TACOS" Good luck and see you soon.

Paul McCartney in the Zocalo, México City

Hi everyone again. I read all your comments of my last blog and of course there are a plenty of things that I can say about my country , my work and customs of this big country but the issue of this day is going to be a historical moment in the life of Mexico City. The unimaginable happened: Paul McCartney, a Beatle in the down town. The biggest song writer live on live and rounded by a set of antiques ruins of the Aztec Empire and Spanish Colonial Buildings, where right now reside all the politic power of this country.

If the McCartney's concert was important itself, it was the date too, May 10th. The mother's day is an important date for every Mexican. People use to celebrate with mothers in special parties. But that day many children left waiting their mothers for. Of course they were on the Zocalo hearing Paul McCartney singing.

My wife and I arrived to the Zocalo around 3:00 p.m. so we had to wait for 6 hours before the concert started. It wasn't much time if you consider many people came a day before and passed the night on campaign houses. As my feet and legs started to bother me, near to 7:30 DJ Chris Holmes started to play McCartney's and Beatles' music in a mix of beats, so it was a big chance for moved our bodies and had some relaxation.

The big moment finally came. The screens drew a violin guitar bass - as the McCartney uses - and the stage was lighted all wide. Suddenly McCartney could be seen in the screen and began to sing Hello, Goodbye. You can imagine 250,000 people chorus: "Hello, hello I don't know why do you say goodbye and I say hello...". After the beginning of the show McCartey took a time for himself and watched the crowed in the big plaza. The music continued and there were many moving moments. One was, when he sang "Something" for his little brother George and other was when he tuned "Here today" for John. Other happy moment was when he played "Obladi - Oblada" with a mariachi band. Mariachi is a set of musicians that play Mexican folk music. Mariachi music has been for decades the badge of the Mexican's culture. So all the people reunited really enjoyed this moment.

The End came and with it Sir Paul McCartney said goodbye to Mexico and all Latino America. It was the last show of his tour for South America.
In a moment when the violence has affected the life of millions of people in Mexico or in this time when near 50% of its population live on puberty, the McCartney's show given for free and over all with love, brought relief and hope that the things one day start to "Getting better".

Long life to Sir Paul, we love you. We hope you come back soon.
Regrets Luis Ubaldo.

PD. A day before me feet and legs still hurt but we were so happy and of course we were so lucky.
